Shopping in Mexico, you will see that eggs are not shorted in the refrigerated section. Eggs have a naturally protective layer that is washed off in the US – but once the protective layer is washed off, then the eggs need to be refrigerated.

You can still store your Mexican eggs in the fridge – it will make them last longer. But you don’t need to.

One caution: don’t let a refrigerated egg sit on the counter for more than 2 hours. It will sweat and bacteria can grow.
